Snickerdoodle Blondies
Ingredients
1 cup butter, melted
1 1/4 cups brown sugar
1/2 cup sugar
2 eggs + 1 extra egg yolk
2 teaspoons vanilla extract
2 1/4 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup white chocolate chips
1/4 cup sugar + 1 teaspoon cinnamon
Directions
Preheat oven to 350 degrees.
Combine melted butter with sugars in a large mixing bowl.
Mix in eggs and vanilla extract.
In another bowl combine flour, baking powder, salt and cinnamon.
Gradually in increments, mix dry ingredients into wet ingredients.
Fold in white chocolate chips.
Pour into a greased or parchment lined pan.
In a small bowl combine 1/4 cup sugar with 1 teaspoon cinnamon and sprinkle over the cookie batter.
Bake for 25-30 minutes. Let cool completely before slicing.*
Note
To speed up the cooling process, refrigerate for 30 minutes.
