They are not simple tagliatelle, they are "Straw and Hay" tagliatelle. The straw, the yellow tagliatelle, are prepared in the classic way and have a nice warm yellow color thanks to the eggs and the more rustic semolina flour. The hay, the green tagliatelle, are prepared by adding a handful of already cooked spinach, well squeezed, to the dough. Dressed with a flavorful Sausage Ragú

Green Tagliatelle:
100 gr 00 flour
100 gr Semolina
1 Egg
60 gr Cooked Spinach
1 Tsp Olive Oil
a pinch of Salt
Yellow Tagliatelle:
100 gr 00 Flour
100 gr Semolina
2 Eggs
1 Tbs Olive Oil
a pinch of Salt
Sausage Ragú:
2 Italian Pork Sausages
1 Lb Pork meat
600 gr Tomato puree
1 Small Red Onion
1 Small Carrot
1 Celery stalk
1 Glass of Red Wine (120 ml)
3 Bay leaves
Olive Oil, Salt and Pepper
