Cubed radish kimchi / kkakdugi
Ingredients
White radish----------------------------------------------------------------------------------- 1 kg
Coarse salt (for brine)-------------------------------------------------------------------- 3 tbsp
Spring onion----------------------------------------------------------------------------------- 30g
Seasoning
Gochugaru (korean chili flakes)----------------------------------------------------- 2 tbsp
Anchovy fish sauce (korean anchovy fish sauce)-------------------------- 1 tbsp
Salted shrimp (saewoojeot)----------------------------------------------------------- 1/2 tbsp
Garlic---------------------------------------------------------------------------------------------- 2 cloves
Sugar---------------------------------------------------------------------------------------------- 1 tbsp
Onion--------------------------------------------------------------------------------------------- 100g
Apple---------------------------------------------------------------------------------------------- 100g
Water--------------------------------------------------------------------------------------------- 1/2 cup
Salt------------------------------------------------------------------------------------------------- 1 tsp
Instructions
1. Peel the skin of radish. Cut into 1cm thick and then dice in cubes. Place the radish in a large bowl and sprinkle coarse salt and mix well. Brine for 1 hour
2. Meanwhile, prepare the seasoning ingredients. Roughly cut onion, apple and cut spring onion into 2.5cm length.
3. Add apple, onion, garlic and water in a blender. Blend until smooth
4. Drain brined radish in a colander.. Rinse the radish in a cold water and drain excess water
5. Place the radish back in the bowl. Add gochugaru(Korean chili flakes) and mix well until the radish in colored
6. Add seasoning mix to the bowl and season with anchovy sauce, salted shrimp, sugar.. Mix well and pour over radish colored with chili flakes. Add spring onion and lightly toss them
7. Put radish kimchi in an airtight container. Leave it at room temperature for about 12 hours (in summer) or 18 hours (in winter) to ripe. Store in a refrigerator
