糖醋排骨(家庭版) Sweet and Sour Pork Ribs

食譜
材料:
小排骨 700公克 (切小塊)
糖 5大匙 (3大匙炒焦糖,2大匙跟陳醋拌勻)
陳醋 3 大匙
醬油 2 大匙
紹興酒 2大匙
八角 1粒
熱水 2杯
薑 5-6片
蔥花 1大匙
白芝麻 1 小匙
花生油 3大匙
做法:
排骨川燙、洗淨,瀝乾水備用。(排骨要擦乾)
在鍋中加入油、3 大匙糖,中火炒至淺金黃色。
加入排骨炒約5分鐘。
再加入紹興酒拌炒。(鍋邊加入)
然後加入醬油、八角、熱水,煮沸後轉中小火加蓋煮約30分鐘。
在小碗中加入另一半的 2 大匙糖、黑醋、薑拌勻,然後加入鍋中不斷炒拌至醬汁濃稠。
再加入蔥花、芝麻拌炒即關火。
置入盤中。
Sweet and Sour Pork Ribs Recipe
Ingredients:
700g pork ribs (cut into pieces)
5 tbsp sugar
3 tbsp vinegar
2 tbsp soy sauce
2 tbsp Shaoxing wine
1 Anise
2 cups hot water
1 tbsp chopped green onion
6 slices ginger
1 tsp white sesame
3 tbsp peanut oil
Method:
Blanch the pork ribs and then drain and set aside.
Heat oil and 1/2 sugar in a pan over medium heat, stir-fry until golden.
Add the pork ribs, stir-fry for 5 minutes.
Pour in the Shaoxing wine.
And then add the soy sauce, anise, hot water and bring it to a boil, lower the heat and cover and cook for 30 minutes.
Mix the 1/2 sugar and vinegar in a bowl, pour in to the pan and add the ginger, stir-fry until the sauce thicken.
Stir in the chopped green onion, sesame and stir-fry for one more minute, off the heat.
