INGREDIENTS
chocolate cookies 450 grams
fresh cream 600 grams
dark chocolate 100 grams
powdered sugar 80 grams
whole milk 70 grams
To soak the cookies
whole milk as needed
To decorate
powdered sugar to taste
unsweetened cocoa powder as needed
Crumble 200 grams of the available cookies in a bowl, add the milk and mix the ingredients until you get a homogeneous mixture.
Place a pastry ring with a 22 centimeters diameter on a large plate, transfer the prepared mixture inside the ring and with the help of a spoon, spread it so as to form the base of the cake, leave to firm up in the refrigerator for 20 minutes.
Meanwhile, pour the cold fresh cream straight from the fridge into a bowl, add the icing sugar and whip it with an electric whisk.
Once the resting time of the base has gone, pour about 1⁄3 of the prepared whipped cream over it, level the surface with the back of a spoon.
Now lightly soak the remaining cookies in the milk then place them on the cream so to form a layer, fill the empty spaces between the whole cookies with a little chopped dark chocolate.
Continue with a second layer of whipped cream, level well with the back of the spoon, distribute another layer of milk-soaked cookies and the remaining chopped chocolate.
Cover everything up with the remaining whipped cream, then level the surface with a spatula, let the cake firm-up in the freezer for at least 2 hours.
After the resting time, remove the pastry ring and distribute the sieved bitter cocoa powder over the entire surface.
EXTRA
Recreate the cookies' motif on a stiff cardboard and place it delicately on the cake, distribute the icing sugar to finish the decoration.
The cake is ready to be served.
