My favorite vegan chili recipe was from McCormick 25 years ago: 3-Bean Chili 1 onion, chopped 1 green or red bell pepper 2 cloves garlic ½ cup dry red wine 1 14.5 oz. can diced tomatoes 1 15 oz. can each black beans, dark red kidney beans, and great northern or pinto beans, drained and rinsed 4 teaspoons chili powder 1 teaspoon each cumin, oregano, and basil ½ teaspoon ground black pepper 2 teaspoons molasses green or red onions, chopped In a skillet with a little oil, sauté onion until golden, then add bell pepper and cook until caramelized. Add garlic and cook a little. Add spices and cook 1 min. Add tomatoes and cook 15 min. or more. Add remaining ingredients except green/red onions. Bring to a boil, reduce heat and simmer 30 minutes or longer, stirring occasionally. Serve with rice, topping with green/red onions, and optionally avocado and cilantro leaves.

Chili is such a money saver, but my husband doesn't really like Mexican cuisine. So, I decided to make a pot of basic chili ingredients - ground turkey, kidney beans, a can of tomatoes, green peppers and onion - but use a different type of seasoning, one that honey might like. I found a recipe for Jamaican jerk seasoning and, throwing caution to the wind, I used it to create "Jerk Chili". It was DELICIOUS. I recommend trying it.

I was watching this and kept thinking that I love this for so many reasons. First of all, I enjoy and appreciate your enthusiasm and great ideas. You have great meal ideas to help us get out of a rut with the same old same old. I think that every one is something that i would love to eat. I am even more pleased as I have practically all the ingredients already in my pantry. I have been serious about rotating my preps and these will help me do just that. My go to bean recipes include baked beans, refried beans, red beans and rice, chili, refried beans, and Texas or Cowboy caviar. I remember that SantaFe beans and rice and agree it was sooo good. Can't wait to try that. I also was just talking to my husband about how I want to try to make black bean burgers. I buy dry beans and and pressure can them myself which cuts the cost and makes them even tastier in my experience. I have a ton of homemade broth as well and have been thinking that I want to start incorporating more of it in my regular rotation. I adore you and your family. Beans and rice is a wonderfully economical way to prepare meals. My family used this in the 70's when inflation was high and jobs short. The best thing about this money saving technique is that it is delicious!!!!!

I do a rotation of beans rice pasta potatoes lentils any leftovers in-between also bulgar I have several medical problems and only eat chicken and red salmon have lost 25 pounds😊

Have you considered using Greek nonfat plain youghart instead of sour cream in your dishes? Since I've made the switch, sour cream seems so fatty now. Thanks for the wonderful ideas in a concise lesson.

Haha so funny that we had this conversation just this morning on Instagram. For the benefit of those with black eyed peas in their pantry…I make a dish my friend from Kerala taught me: cook mustard seeds, split yellow peas and some green chili (about a tsp of each) in 1tbsp coconut oil. Cook until the Mustard seeds pop. Add some diced squash (she used opo squash from India but I’ve used other summer type squash), add a can of coconut milk, and a can of black eyed peas. Simmer for about 10 minutes or until the squash is soft. You can top with coriander when use serve on basmati rice.

I love chipotle peppers in adobo sauce. Crockpot honey chipotle bbq shredded chicken is divine. Refried Beans Rice Skillet is amazing with chorizo or Jimmy Dean Sage Sausage or sub refried beans with drained black beans. We are hooked on crumbling Cojita cheese on all our mexican style meals. All your recipes are amazing. You really work hard for your videos. I have made a lot of your past recipes. Thank You.

I go to Walmart and look on their discount bread rack and get itslian or french bread sliced or whole for 48 to 84 cents a loaf depending on the day and get bread for well under a dollar ! Just a tip to cut costs 😊

Save the red pepper packets from pizza delivery, also you cay dried pepper or onion, you can always use dehydrated onion and minced garlic from your fridge.

I am so looking forward to this video Maria! I've taught myself to be frugal, and am grateful to love beans! Always looking for ways to keep my food budget under control during these ridiculous times. I'll just put this out there too...the fed and government are outright lying about the rate of inflation. Housing has gone up a Minimum of 30%, food has gone up a Minimum of 40%...plus package size "shrink-flation" also needs to be accommodated for too.

@Maria I loved seeing this. We don’t eat meat and it is a very inexpensive way to go although that isn’t why we eat this way. I liked that you slowed down and explained your burrito rolling technique, I always have friends asking me to show them how and I improved my own method quite a few years ago by watching a guy here on KZitem. 🤷🏻♀️

Really like your videos and the fact that you shop at my beloved Market Basket❤️. Have you ever done a from the beginning planning menu or a video of your pantry and what you like to have on hand? I struggle on what to keep in stock constantly and how to organize it all. Also, I’m debating making so mind of organizational book with recipes and other info to refer to.

the enchilada sauce has chicken broth , so this is not vegetarian . maybe with veggie broth . thank you for a great recipe .

My husband was listening to this as I watched the video for a second time. He was like, "You're going to rice and beans me to death!" I laughed and said, did you like the bean quesadillas we had the other day? What about the refried beans I made to go with that Mexican rice dish?" He suddenly realized that rice and beans didn't mean boring or yucky food. 😂

Thanks for recipes as always...but I always notice a Mexican theme. Not just you but many tubers. I love it the same as the next person, I truly do, but I always find it surprising that no one cooks Italian style. Maybe that could be a new chapter for you because really, no one I notice is doing it. And there are so many amazing Italian recipes. Thank you always for sharing.

But I will say, I am from the East Tri state area and they have no idea what they are missing! Was just a suggestion but most of the people I watch are from the Midwest and set in their ways of cooking I guess. That is to be expected. Thanks for the suggestion, I will check the channel out.

Your Vegetarian Black Bean Enchiladas isn’t vegetarian-you used chicken broth. Use veggie broth or mushroom broth or even water instead. To make it vegan use a vegan cheese or omit the cheese instead of the dairy cheese.

DON'T WASTE YOUR BEANS by making them Get you some disgustingly cheap instant mashed potatoes flashes (the kind that has nothing you literally have to add milk salt pepper butter everything they're just plain flakes) Use those to thicken your beans there will not be any flavor at all..... Your beans have to become up to a boil do not be fooled it takes it a minute or so to thicken so don't just keep adding
