Thank you so much! Lovely video! I was just given a bag of whole raw dried rymbai beans ("ramai" in Bangladesh) by dear Khasi friends. I am trying to figure out how to cook it. Do you have a recipe for how the dry seeds are fermented into the paste in the leaf parcels that you used?

That's an interesting way of cooking your tungrymbai. In my family tungrymbai is cooked for a minimum of 3 to 4 hours and the ingredients are very different.

I remember eating Tungrymbai doing my boarding school days and just a bit of it was enough for us to eat tons of rice....Also I always use to wonder where they black color came from and now I know...will definitely give it a try....btw do you have a Jadoh recipe by any chance?

Are the beans fermented with salt or the spores of aspergillus oryzae? Does it taste like Japanese miso or Korean doenjang? (Finding those beans in Canada is not likely.)

Heathen Hearth Hi to prepare Tungrymbai local variety of soyabean called rymbai beans are used, if you can't source them the soyabeans available in grocery shop will do. The basic idea is to provide cheap source of high protein food. Soyabean seeds are soaked overnight and cooked till they are soft and mushy. Excess water is drained off and packed inside the leaves of a plant whose scientific name is Pyrnium Pubinerve. This is left to ferment near fireplace for about 4 days. The leaf that's used to wrap it is the source of the microbes required for fermentation. Microbial analysis has revealed the presence of lactobacillus, yeast, enterococcus faecium, candida parapsilosis and saccharomyces banayus. It's a spontaneous fermentation process without the delebrate addition of any fermenting organism. Also salt is not added while cooking the beans. No it's nothing like either of them in taste. Look and texture wise it's more like doenjang.

You might get fermented soy bean or a closer version of it in a Korean or Japanese grocery store. Let me know if you find one and make it :)

If you cook this way it will still have that yucky smell which is unbearable to most people. You need to first boil it for atleast 3-4 hours then the taste will come out really nice.

Vijay Upadhaya I remember long ago there was our manservant who dislike the smell so much that he don't sit near us during meal times but on one day idk how he starting tasting it and later on he likes it to a point that he asked for the pan on which it was cooked so as to completely finish the remainings🤣🤣
