Some cast iron potjie goodness! This potjie's inspiration comes from Tuscany, Italy. Delicious lamb's rib, fresh tomatoes, capers, olives, fresh garlic, and aromatic herbs takes this potjie into a league of its own! Served with homemade "potbrood".
Recipe
∙ 1.5kg Lamb ( I used Lamb's Ribs, but any cut will do great)
∙ 2 onions
∙ 12 garlic cloves(1 bulb)
∙ 150g green olives (pitted)
∙ 2 tablespoons capers
∙ Salt & pepper
∙ 1 bell pepper
∙ olive oil
∙ 1.3kg fresh tomatoes
∙ 1 teaspoon chilli flakes
∙ 500ml water
∙ ½ tablespoon dried Thyme
∙ 1 tablespoon dried oregano
∙ 1 teaspoon fennel seeds
∙ 1 tablespoon dried parsley
