SHANGHAI-STYLE SCALLION OIL NOODLES - 2 servings

1.5 Cups Peanut Oil
10 Scallions - chopped into 2" lengths
2 Large Shallots - sliced
Dried Shrimp Soy Sauce - 2-servings
16 Dried Shrimp - soaked for 15 minutes in ~2 tbsp hot water
2 TBSP Shaoxing Wine
2 TBSP Water
1 Knot of Scallion
1 TSP Sugar
2 TBSP Light Soy Sauce
1 TBSP Dark Soy Sauce
Per Serving
80g Wheat Noodles
2 TBSP of the Scallion Oil
2-3 TBSP of the Dried Shrimp Soy Sauce
Instructions

Add the chopped scallions and sliced shallots to a wok along with 1.5 cups of peanut oil.
Heat on medium-high heat until bubbles start to form.
Turn heat down to medium-low and fry for about 10 minutes until scallions are crispy and become dark golden brown, almost black.
Drain the scallions on paper towels and strain the scallion oil into a separate heat-proof container.
Combine the soaked dried shrimp and the 2 tbsp of soaking liquid along with Shaoxing wine, water, and knot of scallion.
Steam for 10 minutes and reserve the steaming liquid.
Do this at the same time as making the scallion oil for efficiency.
Pat dry, chop the soaked dried shrimp into small pieces, and pan-fry in some oil until crispy and fragrant. ~2 minutes.
Dispose of the scallion knot and save the liquid. There should be about 4 tbsp. If not, add water.
In a small pot, combine your shrimp steaming liquid with 2 tbsp light soy sauce, 1 tbsp dark soy sauce, and 1 tsp sugar.
Bring to a boil and it's ready.
Cook your noodles according to package instructions with some salt.
Plating - combine your noodles with 2 tbsp of the scallion oil, 3 tbsp of the dry shrimp soy sauce mixture, and top off with some of the fried scallions and dried shrimps.
