Uni shooters are some of my favorite starter dishes. I love oyster shooters, so naturally when I first encountered uni shooter, I was intrigued by the familiar ponzu sauce like flavors with all the raw components such as the uni itself, raw quail egg, and tobiko eggs. Sake and mirin really help flush this down into my mouth for the pleasant surprise of the soft and intimate texture of the uni and quail egg. The umami flavor is accentuated by nori, furikake, chives and sesame oil. This is truly a flavor bomb.
Ingredients:
1-2 pieces of uni
1 quail egg
2 tsp of tobiko
1/4 cup of sake
2 tsp of mirin
1 tsp of light sodium soy sauce
Furikake
Chives
Sesame seeds
Nori
