This is a Christmas dessert recipe preparation demonstration at that long established yet vibrant high end restaurant "Le Vallauris" in Palm Springs, California, USA. Executive Chef Lair and his fine Pastry Chef Laurnet Dellac, both trained in France, give a demonstration during the season on the 2nd Monday of every month. This is the 3rd of 3 different dishes they demonstrated before an audience of approximately 50 eager guests on December 12, 2016 out on the tree shaded patio where they later ate lunch of the dishes they had just seen prepared. The demonstrations are accompanied with the recipe book that lays out the ingredients and measures.
