Vegan Cheesecake! I was excited about the very notion of this when I went vegan, I didn't expect to be eating such things, let along have them taste so good! This is the classic cheesecake recipe I use - vanilla and berries. Is pretty simple, more affordable than conventional cheesecakes and super delicious - so I hope you enjoy it
Vegan vanilla berry cheesecake
base
- 3/4 cup oats
- 1 cup almond meal
- 1/3 cup dates
- 2 tbsp coconut oil (really like this coconut oil)
- salt
bake 15min 180degrees
filling
- 1 can coconut cream
- 1 cup raw cashews - soaked for couple hours+
- 4 tbsp maple syrup
- 3 tbsp lemon juice
- 1/2 vanilla pod beans or 1 tbsp vanilla extract
freezer 15min to firm up
Jelly
- 2 tsp agar agar powder www.iherb.com/now-foods-real-f...
- 2 cup berries
- 2 tsp some kind of sweetener - sugar, agave, maple…
mash berries, dissolve powder in that liquid, heat up to simmer for 2-3min, cool then pour. Refrigerate for at least 4-5 hours
