It’s #TastyTuesday with a meal for the mushroom lovers...a portobello mushroom pizza! This is an easy meal to whip up plus it’s very filling. Fill free to add a variety of veggies to these mini pizzas and enjoy!
Ingredients:
2 Portobello mushrooms
Vegan cheese (used here Daiya)
Marinara sauce
Broccoli
Frozen Peppers & onion mix
Season to taste with:
Salt
Basil
Garlic powder
Directions:
1. Preheat you oven to 350 degrees F
2. Prep your mushrooms by removing the stems and gently scraping out the dark/brown part to make room for stuffing.
3. Bake for 10-15 minutes.
4. On medium heat, add a drop of oil or water to a pan and add in your peppers, onions, seasonings. Sauté for about 2- 3 minutes. Then add in broccoli.
5. Take you mushrooms out of the oven. Dab/pour off the liquid from them.
6. Add your sauce, pepper mixture and broccoli into each mushroom. Top each with vegan cheese.
7. Bake for an additional 10-15 minutes.
8. Top with basil and enjoy!
