Backyard Gardening Thank you you so much! It has been a hobby of mine since I was 17 so you were younger than me! Right now the reds and Chard among the whites are going through their acid softening malolactic fermentation, then they will go through cold stabilization, then it will go through barrel ageing with one third new oak, the barrel lots will be combined, there will be a little more bulk ageing and finally I bottle. We don’t drink any of the reds until they are 24 months old. Have a very merry Christmas God bless Klaus

Princess Lilian's Tips I usually ferment the red wine on the skins for seven days and then I use my press to extract the new wine. We don’t actually start drinking the wine until it’s two years old! Making good red wine needs time! Klaus

We have driven out to Niagara (an hour and a half each way) five times in the last six weeks to pick up different grape varieties as they ripen. I use to make wine. I haven't in a couple years. I had about a hundred Norton grapevines. It is a native grape here, you probably already know that. I may start another vineyard one of these days, when I have the time. I Love the process. I used to have a little vineyard with Marchel Foch in my small back garden but I pulled them up to grow more vegetables, my friend from church has a vineyard, I make the wine and he grows the grapes! I make most of my wine from Niagara grown grapes 🍇 though. Klaus

Any time there is fruit or other cap fermenting in the wine it should be punched down at least twice a day, even white wine just fermenting with no fruit needs to be stirred. I’m not sure how thick the cap would be on Elderflower wine as I haven’t made it but it should be punched or stirred for sure! In small batches I think a clean hand and arm could do the job just fine. I upgraded to the punch down tool because I am making 700L or so every year. Take care Klaus

steve's growing space I usually keep my wine on the skins for a week, weekend to weekend, if I didn’t have to work I might leave it a bit longer but I add enzymes to make sure I get all the good stuff out of the skins in that time. Klaus

I used to use Campden tablets many moons ago, these days I use a powdered form of potassium meta bisulphite that I make up as a liquid to dose the wine with as needed. With the reds I just make one small addition at crush because once the alcoholic fermentation is over I’m going to inoculate the wine with malolactic bacteria (which is very sensitive to sulphite) to convert the malic acid in the wine to lactic acid and carbon dioxide, which really softens the wine. After the malolactic bacteria have done their work I will give the wine a good dose of sulphite. Klaus

I was telling you that we actually have natural stands of Paw Paw here in Southern Ontario in the Niagara region, Niagara has a special micro climate. People are very tight lipped about where the stands actually are. It’s funny to think that Southern Ontario is in the Carolinian forest 🌳. Klaus

@@WhatWeDoChannel lol well at least I got this reply 😉. Yes I know there are a couple of parts of Canada with microclimate areas, so I'm not surprised pawpaw are doing ok there. They are easily hardy in the UK of course but I'm interested to see if our summers will be warm enough to actually get fruit. I have the same concerns with my persimmons. I have 4 varieties of pawpaw so keeping my fingers crossed 🤞🤞 Brett
