那天无意中看到电视播出「回味大马之咸蛋篇」的节目,访问某家餐馆招牌「咸蛋炒米粉」,看了很想去尝试,可惜因为疫情期间不能去到哪里,所以我自己先尝试炒,出来的结果是满意的,但我觉得咸蛋黄需要再加多2粒,味道就会比较浓郁。
材料:
米粉 Bee Hoon(Rice Vermicelli) 200克/g
咸蛋 Salted Egg 3粒/pc (建议用5粒咸蛋黄跟3粒咸蛋白)
鸡蛋
Egg
1~2 粒/pc
猪肉 Pork 200克/g
小辣椒
Chili Padi 2条/pcs
咖喱叶 Curry Leaves 30克/g
高丽菜 Cabbage
200克/g
胡萝卜 Carrot 半条/half
食油
Oil 少许/little bit
无盐奶油 Unsalted Butter 80克/g
盐 Salt 少许/little bit
备料:
1)先提前泡米粉,记得用室温水就可以了
2)咸蛋黄跟白分开,咸蛋黄蒸熟压成泥,咸蛋白加1~2粒鸡蛋打成蛋液
3)猪肉切片,用1匙料酒,1匙酱油,少许胡椒粉跟半茶匙食盐腌制30分钟
4)高丽菜,胡萝卜切丝;小辣椒切粒,拉出咖喱叶备用
做法:
1)热锅下2匙食油,先煎鸡蛋,因为有咸蛋白的关系,所以煎时要弄的越碎越好,不然吃的时候会很咸
2)煎好的鸡蛋线捞起备用
3)加入少许油在锅里,先把猪肉片炒至变色
4)加高丽菜跟萝卜丝,拌炒均匀
5)所有材料熟后,就加入1~2小碗清水(要看你用的米粉,每个牌子的米粉不一样)焖煮至沸腾,可以加少许胡椒粉跟食盐调味
6)这时可以加入米粉拌炒,炒均匀后,才加刚煎的蛋碎进去拌均,放一旁
7)用另外一个锅,下2汤匙食油跟无言盐奶油
8)奶油融化后,加入咸蛋黄泥拌炒至泡沫
9)加咖喱叶跟小辣椒拌炒出香气就可以熄火
10)最后倒入刚刚炒好的米粉拌均匀就可以上桌了
Preparation:

2) Salted egg yolk is separated from the white, then steam the salted egg yolk and pressed into a puree after steamed, salted egg white is mixed with 1 to 2 eggs (need to fried later)
3) Pork slices, marinate with 1 spoon of cooking wine, 1 spoon of soy sauce, a little pepper and half a teaspoon of salt for 30 minutes
4) Cabbage, shred carrots; chilli padi cut dice, pull out curry leaves and set aside
Method:
1) Put 2 spoons of cooking oil in a hot pan, and fry the eggs first. Because of the salted egg, you should make them as small as possible, otherwise they will be very salty.
2) Pick up the fried egg and set aside
3) Add a little oil to the same pan, fry the pork slices until the color changes
4) Add cabbages and shredded radish, stir fry evenly
5) After all the ingredients are cooked, add 1 to 2 bowls of water (depending on the rice Vermicell you use, each brand of rice Vermicell is different), simmer until boiling, you can add a little bit of white pepper and salt
6) After taste, you can add rice Vermicell and stir-fry. After they are evenly fried, add the fried eggs and mix them evenly. Set aside
7) In another pot, add 2 tablespoons of cooking oil and unsalted butter
8) After the butter has melted, add the salted egg yolk stir fry until foamy
9) then add curry leaves and chili padi, stir fry for aroma, then turn off the heat
10) pour in the fried rice Vermicell and mix well, then serve.
