【猪雜湯】Pig's Organ Soup / Pig Mix Soup
猪杂汤是马新两地华人的特有的美食,不同地区的口味都略有不同,有时候味道真的是 南辕北辙,各有千秋。但是,佐料一般都以猪肉为主,再参杂猪内脏(猪肚、猪肝、腰子、猪肠、猪血、猪舌等)。
本期分享的是我家乡的口味 -- 峇株巴辖 (Batu Pahat) 柔佛州 一个拥有62%华人人口的城镇。或许只有峇株人才懂得的好味道。它的汤底是用:咸水梅、咸菜和冬菜熬煮而成,佐料除了猪肉外,还添加了鱼片,所以是酸酸、咸咸的,汤底非常鲜甜。因此,有的人会称它为:咸菜汤、肉脞鱼汤等别称。
今天我将和大家分享这道非常开胃的猪杂汤,做法简单方便快速,非常下饭😋 佐料方面,我就省略了猪内脏,希望大家不妨试试煮煮看!
猪杂汤煮好后,可撒上葱头酥/油 增香,配上一碗白米饭/芋头饭,美味即成!

食谱 Recipe
汤底 Soup base
1)咸水梅 | Salted Plum - 2粒+2汤匙汁 | 2pc + 2Tbsp of sauce
2)咸菜切丝 | Shredded salted vege - 约1汤匙 | about 1Tbsp
3)冬菜 | Preserved Cabbage - 1 茶匙 | 1Tsp
4)鱼露 | Fish Sauce - 2 汤匙 | 2 Tbsp
5)清水 | Water - 1.5公升 | 1.5 Liters
配料 Ingredients
6)肉脞 | Minced Meat - 150克 | 150g
7)猪肉片 | Pork Meat Slice - 150克 | 150g
8)巴丁鱼片 | Patin Fish Slice - 150克 | 150g
9)番茄 | Tomato - 1~2粒 | 1-2 pcs
10)油麦胆 | Baby Romaine - 2 粒 | 2 pcs
可另加料 :豆腐、猪肉丸、猪内脏等等。
Additional ingredients can be added: tofu, pork balls, pork offal, etc.
【Pig's Organ Soup】 / Pig Mix Soup
Pig's Organ Soup is a unique delicacy of the Chinese in Malaysia and Singapore. The tastes from different regions are slightly different. But, sometimes the taste may really dramatically different, each has its own merits. However, the condiments are mainly pork, and then mixed with pig offal (pork stomach, pork liver, kidney, pig intestines, pig blood, pork tongue, etc.).
In this episode, I will be sharing the taste of my hometown - Batu Pahat, Johor, a town with 62% Chinese population. Perhaps only local people know the taste of this Pig's Organ Soup. Its soup base is made by simmering salted plums, salted vege and preserved cabbage. In addition to pork, fish fillets are added as the condiments, so the soup is a bit sour, salty and full of umami taste. The soup base is very refreshing. Therefore, some people may call it: salted vege soup or minced meat fish soup and other names as well.
Today I will share with you this very appetizing pork offal soup. The preparation is simple, convenient and fast, and it is delicious😋 As for the condiments, I omitted the pig offal. I hope you might try cooking it!
While the pork offal soup is ready, it can be sprinkled with some fried shallot to increase its fragrance, and served with a bowl of white rice/taro rice. It is so yummy!
