At my previous job, my coworkers and I would buy breakfast quesadillas every Friday morning. It was a nice treat to look forward to every week. There are a lot of things that I miss about my old job, and breakfast quesadillas is one of them. I started making these at home and they’re just as good as the ones we used to buy. The best part is that you can adjust the ingredients to your liking. I like to add lots of veggies, less cheese, and pair them with this delicious salsa. You can leave out the egg (I used to buy them without the egg), add sausage or chorizo, and leave out or replace the veggies. These are so simple and quick to make!
INGREDIENTS
Salsa:
- 3 tomatillos
- 1 roma tomato
- Small piece of onion
- Garlic clove
- 3 chiles de arbol (more or less depending on how spicy you want it)
- Small handful of cilantro
- Salt to taste
Quesadilla
- Bell pepper
- Onion
- Spinach
- Bacon
- Eggs
- Monterey Jack or Mozzarella cheese
