90% Hydration Sourdough & With All Tips
If you pay attention to all the details, you can make such a bread.
Dough;
350 g high protein bread flour
100 g whole wheat flour
50 g durum wheat flour
430 g of water
100 gr active starter (If you don't have sourdough yet, check out the first video of my channel).
Take 20 g of your sourdough in the refrigerator and mix it with 40 g of flour (10 g of whole wheat and 30 g of bread flour) and 40 g of water and wait until your yeast doubles at room temperature.
10 g salt + 10 g water
Watch the video how the dough is made. I do not recommend that you apply sourdough recipes only by looking at the recipe. Pay attention to the tricks.
Total fermentation time 5.5 hours (at 25 degrees room temperature)
The basket I use is 24 cm in size and the cast pot I use is 7 lt (ikea vardagen)
Bread was baked at 230 degrees with a lid for 20 minutes and at 210 degrees without a cover for 20 minutes (steam support was provided with ice cubes).
