I love chicken and I love spicy but a McDonald's Spicy chicken sandwich
at 500 calories isn't going to fill me up for dinner! Bring on the fries and then your daily calorie budget is blown!
In this video I make a fabulous spicy harissa chicken with goat cheese, sprinkled with roasted chick peas, a mound of veggies, all nestled on a savory pumpkin mash. Believe me, you are going to be full! All for 514 calories, with 64g of protein and 7g of fat. Dig in!
Spicy Harissa Chicken with Goat Cheese
200g boneless chicken breast
30ml harissa paste or spice blend
30g goat cheese
1clove garlic mashed
10g or so chopped onion
120g tinned pumpkin puree (not pumpkin pie filling!)
15g roasted chickpeas (recipe below)
50g 0% Greek yogurt
Juice of 1/2 lime
Dash of cumin
Any veggies you like! In the video I used…
50g grape tomatoes
75g green beans
50g sliced red pepper
100g sliced eggplant salted and drained
Method:
Slice chicken in half horizontally into 2 thinner pieces and spread harissa paste or rub onto both sides. You could do this the night before if you're meal prepping
Add garlic and onion to a small fry pan and sauté in chicken broth, water or oil (if you have room for the extra cals)
Add puréed pumpkin, mix and allow to heat through
Spray a pan, heat and fry the chicken on both sides for 6-7 mins or until done ( they're thin and won't take long!)
Using either your microwave, airfryer or the same pan from the chicken, lightly cook the veggies in a quick spray of oil, S&P
Mix your yogurt with lime juice and optional dash of cumin for drizzle
Create your masterpiece!
On your plate spread a layer of pumpkin puree
Add the first piece of chicken and top with 1/2 the goat cheese, a few of the chickpeas and cilantro, if using
Top with the 2nd piece of chicken, the rest of the goat cheese
Surround with cooked veggies, sprinkle with chickpeas and garnish with diluted yogurt topping.

Roast chickpeas
1 tin any size chickpeas
Spray oil
Optional spices
Cumin, garlic powder, sumac, smoked paprika S&P (use your favourite combo!)
Use a couple of tablespoons total
Drain and thoroughly rinse chickpeas
Dry on a clean tea towel
Pick out loose skins
Give a quick spray with oil and toss with the spices
Spread out on a parchment lined pan and bake at 350• for about 45 minutes, giving the pan a shake every 15 minutes
The crunch doesn't last but the flavour does!!
