I've made 3 appetizers that you can make lickety split that will satisfy your hunger and keep you on track with your calorie goals. Make them for your own party or bring them to your next potluck! Sneaky Deviled Eggs
6 or more hard boiled eggs
1 small butternut squash
1 small onion chopped
1-2 cloves garlic chopped
1tsp minced ginger
1 1/2 tsp curry powder
Smoked paprika for garnish
Chopped chives for garnish
Method:
Slice squash in half and bake in 350 oven for about an hour or until fork tender
Sauté onion, garlic, ginger in a bit of water or stock (or oil if you're not watching calories)
Add curry powder and continue until onion etc are tender.
Place squash and onion mixture in food processor and pulse to combine
Slice hard boiled eggs in half and remove yolks. Fill egg half's with squash mixture, sprinkle with paprika and chopped chives. Yum!
Chicken Caesar Bites
Belgium Envive
1 boneless chicken breast sliced horizontally (for 2 thinner pieces)
2 slices turkey bacon chopped small
Crushed croutons or crackers for sprinkling
Fresh basil if desired
Dressing
1 garlic clove finely chopped
1/2 cup 0% Greek yogurt
1 tbsp hummus
1/2 lemon juiced
1tbsp white wine vinegar
1 tsp Dijon mustard
Dash of Worcestershire
Salt & pepper
Add all ingredients into a jar and shake it baby!
Assemble as shown in the video!
Spicy Cauliflower Coated Shrimp
1/2 cauliflower pulsed finely in food prep
Egg white
Thawed raw shrimp (I use 16/20 size)
Powdered Sriracha seasoning or your choice (it's not that hot so you can always add a dash of cayenne!)
S&P
Method:
Lay cauliflower crumbs on a cookie sheet, sprinkle with seasoning and bake in a 350 oven, turning every 10 minutes until lightly browned
Peel shrimp ans dip in egg white and then into cauliflower, pressing cauliflower onto the shrimp. Place on air fryer basket, spray lightly with cooking spray and pop in air fryer at 350 for 5-6 minutes. That's it!
Will's Anabolic Spinach Artichoke Dip
Approx 750 calories for the entire recipe so you do the math per dip depending on how big a dipper you are 😂)
14oz (400ml) can artichokes drained and chopped
10oz (aporix 280 ml) pack frozen chopped spinach thawed and we'l drainedl
1 cup (250ml) 0% greek yogurt
1 cup (250ml) shredded part skim mozzarella cheese
1/3 cup(80) Parmesan cheese
2 cloves peeled and finely chopped garlic
Method:
Preheat oven to 350*
Save a bit of the mozzarella for the top and then mix all of the other ingredients together well.
Transfer to an oven proof dish, sprinkle with reserved cheese and bake for 20-25 minutes. Heated through, brown and bubbly! This is crazy good!
