What if we tell you that the barbecue tradition can be reinvented? In today's video, Chef Alex Atala teaches how to make a more intimate barbecue and inverting the values of meat with vegetables.
Recipe ingredients:
• 50 g of butter
• 6 Portobello mushrooms
• 3 Cambuci peppers
• 1 Pineapple
• 2 plantains
• 2 Endives
• 2 Romaine lettuces
• Salt flower
• Black pepper
• Lemon
• Olive oil
PINEAPPLE IN BRASA
Place the whole pineapple over the coals. As the peel burns, rotate the pineapple until all the fruit looks burnt. The process should take about 15 to 20 minutes. Remove from the coals, cut the ends and open the pineapple lengthwise with a knife. Season the roasted pulp with lemon and black pepper.
CATAPLANA OF MUSHROOMS AND CAMBUCI PEPPER
Remove the stems and cut the mushrooms in four. Place in a cataplana pan together with the butter. The peppers can be placed whole or, if you prefer with less heat, cut in half and without the seeds. Close and position the cataplana over the hottest area of the grill. 5 minutes later, open the cataplana, stir the vegetables, close and return to the fire. After another 5 minutes, open it again, place a piece of live coals resting on an aluminum foil support and with a spoon, water the coals with a little of the melted butter. This will create enough smoke to flavor the vegetables. Close the cataplana and let it sit out of the fire for a few minutes. When serving, open the pan and remove the ember. If you prefer, season with a little salt.
EARTH BANANAS IN BRASA
Place the plantains directly on the coals. Leave them on for about 10 minutes or until the shells look completely burned. Remove from the coals, cut the bananas. Season the roasted pulp with butter salt.
LEAVES ON THE GRILL
Cut the lettuce and endives lengthwise in half. Place them on the grill and season with a drizzle of olive oil. The oil that falls on the coals will produce smoke to flavor the leaves. After two minutes, remove from the grill, season with salt and oil.
