INGREDIENTS for about 20 pieces
coconut shredded 200 grams
fresh cream 100 grams
butter 40 grams
sugar 80 grams
For the outer shell
milk chocolate 350 grams
Place the cream and the butter in a saucepan and heat them up so that the butter melts completely. Then add the sugar and stir until completely dissolved.
Move the saucepan away from the heat, add the grated coconut and mix well to absorb the liquids.
Transfer the coconut dough to a sheet of parchment paper, form a loaf about 1,5 cm tall and 5-6 cm wide, wrap it gently in parchment paper and transfer to the refrigerator for 30 minutes.
After this time, cut it about every 2 cm, you will obtain pieces weighing around 20 grams each.
Shape them with your hands to shape the bonbons, then place them to a baking sheet lined with parchment paper. then put in the fridge for about 90 minutes, or if you prefer in the freezer for at least 30 minutes.
When the coconut bars have cooled and hardened, melt the milk chocolate in the microwave or in a double boiler, then dip the bars in it, one at a time, making sure they are completely surrounded in chocolate.
As they are ready, place them on a sheet of parchment paper, create ripples on the surface and let the chocolate cool so that it solidifies.
