Ingredients
4 lbs chicken wings
½ cup olive oil
2 tablespoons home made peri peri sauce
1 teaspoon salt
1 tablespoon black pepper
1 tablespoon oregano
1 tablespoon paprika
1 tablespoon red chili flakes
2 tablespoons unsalted butter
4 tablespoons homemade peri peri sauce
¼ cup white wine vinegar
Instructions
Start by cutting off the tip of the chicken wing and discard. Cut the chicken in half, separating the drumette and the wingette. Wash the chicken well and pat dry. Using a large bowl, mix the spices, add olive oil and mix it well. Add the chicken wings into the marinade, give it a good mix, cover it with cling film and marinate in the refrigerator overnight. Preheat oven to 400 degrees Fahrenheit. Line a baking tray with aluminum foil, spray with avocado oil, arrange the chicken wing and bake for 50 minutes. Halfway, flip the wings and baste as needed. Turn to broil at 450 degrees Fahrenheit, the last 5 minutes for browning, when done remove from the oven and set aside. Place a pot on the stove, add unsalted butter, homemade peri peri seasoning, and white wine vinegar and allow to simmer for 10 minutes, stirring as needed to prevent sticking. Add the sauce to the chicken wings and give it a toss, plate the wings, garnish with parsley, serve with carrots, celery and the peri peri sauce on the side and enjoy.
