To prepare dried duck you will need:
• Duck - 2-3 kg
• Salt - 2-3 kg
• Rosemary - 1 tbsp.
• Ground black pepper - 1 tbsp. +1 tsp
• Paprika - 1 tsp.
• Garlic (dry) - 1 tsp.
• Coriander - 1 tsp
• Sugar - 1 tsp.
• Mustard (powder) - 1 tsp.
• Cognac - 40 ml
Steps to cook dried duck at home:
1. Prepare the duck: wash and pluck
2. Cut the duck in the middle of the breast, and open it according to the “tapaka chicken” principle
3. Clean the duck from the films in the middle, as well as from the insides
4. Rinse the duck well again under running water and pat dry with paper towels
5. Salt the duck:
• cover the bottom of a container of a suitable size with an even layer of salt, about 1 cm thick
• Sprinkle salt with 0.5 tbsp. rosemary and 0.5 tbsp. ground black pepper
• put prepared duck on salt and spices
• Top the duck first with spices (0.5 tbsp each of rosemary and ground black pepper), and then with a thick layer of salt
6. Send a container with a duck in a salt cocoon to a cool place (10-12 degrees) for salting for 7-8 days
7. Remove the duck from the salt and rinse it thoroughly under cold running water
8. Dry the duck with a paper towel
9. Mix spices and cognac
10. Coat the duck with a mixture of spices and cognac
11. Tie ropes in the form of eyelets to duck legs
12. Hang the duck in a cool (10-12 degrees) drying room for 20-35 days.
