Just before the winter ends in this part of the world, join us the last but not least episode, of the Chateau de Chaumont winter trilogy. Preparing dinner in field conditions is an exciting challenge, but the effort will pay off with a memorable experience. We've experienced traditional main course and hot drink, and appreciated the effort put into creating a festive table. I haven't spared myself from making a nice table and great recipes to share with most wonderful people even if it's in a yurt in the middle of a building site!

• I cooked the CARBONAD...
CARBONADE FLAMANDE Ingredients for 4-6 people:
1 kg of beef ( bourguignon /chuck/shank )
50g butter/margarine
1-2 onions
75cl/1L of dark beer (I'm using Guinness)
3 Tbps of brown sugar (or 2 speculoos)
3 Tbps of corn/potatoes/flour
3 Tbps Red win vinegar
3-4 slices of gingerbread spread with strong mustard
The 4 spices (nutmeg, ginger, clove, cinnamon) a pinch of salt and pepper
1/2 l of water
Preparation: 30 minutes Cooking: 3 hours Cut the meat into pieces. Brown them in a stewpot with the butter Add the flour and chopped onion. Leave to cook for a few minutes. Deglaze with vinegar. Add beer and 1/2 1 water Salt, pepper Incorporate the gingerbread spread with mustard, the bouquet garni (if you put any) , the cloves and the brown sugar Simmer over low heat for about 3 hours … at least.
Serve with peeled, boiled potatoes Brussels sprouts and squash

Vin Chaud/Mulled wine/Glükwein
75cl strong red wine (merlot etc...)
The 4 spices and/or
cinnamon powder and sticks (2)
nutmeg
2/3 cloves
125gr brown sugar
1 anis star /anis seeds
orange
2/3 cardamons (optionnel)
Cover and let it cook few minutes in a low fire with all the ingredients then you turn off the fire. Let it infuse at least 30 minutes so you’ll get all the aroma from the spices . And just before serving, you heat it up again without boiling it, serve it hot .
