INGREDIENTS:
- 300 g Type 1 flour (or bread flour)
- 180g water
- 5 g fresh yeast
- 20 g extra virgin olive oil
- 8 g salt
- peanut oil for frying
INSTRUCTIONS:
- Crumbling fresh yeast into the water. Transfer the flour to a work surface and make a space in the center. Add the salt to the edges of the flour and the water with the yeast to the center along with the oil.
- Start incorporating the water into the flour and then kneading with the hands until you get a smooth and elastic mixture.
- Transfer to a lightly greased bowl, cover and leave to rest for 3 hours, it will have to double in volume.
- Heat plenty of peanut oil in a saucepan.
- Transfer the leavened dough onto a lightly floured surface and cut into pieces, roll them out and, when the oil is hot, fry them for a few moments on each side. As soon as they are swollen and golden, drain.
- Salt and serve while still hot.
