Salmon has really risen in popularity, and you can find it on most restaurant menus these days! It's no wonder, as it's so versatile!! We enjoy it regularly at home (not as much as chicken) and I love coming up with different ways to prepare it! Always fast, easy, healthy, and delicious.
In today's video, I prepare salmon 3 very different ways, and you're going to love them all! Wild salmon is especially wonderful. But wild or farmed, be sure to buy it fresh as possible - especially when making the poke bowl!

SALMON IN PARCHMENT PAPER
You'll look like a culinary genius serving this in your house! Fancy enough for company, easy enough for a weeknight - give it a try.
-1 piece of salmon per person (try to have fairly uniform sizes)
-thinly sliced fennel
-thinly slices red onion
-thin slices of orange
-juice of ½ orange
-chopped fresh dill (or dry)
-chopped parsley (or dry)
-salt and pepper, to taste
-chopped tomato (optional)
1. Tear a good sized piece of parchment paper. Fold it in half and open it up.
2. Season salmon on both sides and place above the fold line
3. Top with veggies and sliced orange. Squeeze orange juice on top and fold parchment paper to close.
4. Bake in 400 degree oven for 12-15 minutes depending on thickness of fish
5. Make sure to check on it so the fish doesn't overcook!
SALMON POKE BOWL
Let your imagination guide you and use ingredients that you like!
-fresh piece of salmon, cut into cubes (preferably wild salmon)
Sauce for Poke, mix together:
-1/4 cup soy sauce
-1 tsp rice vinegar
-splash sesame oil
-1 tsp sriracha (or other chili paste or sauce!)
Optional Sriracha sauce topping:
-Sriracha (or fake sriracha)
-Greek yogurt
In my poke bowl, I used:
-brown rice
-edamame
-avocado
-sliced cabbage
-cucumbers
-crumbled nori
-grated carrot
-pickled ginger
-sesame seeds
-green onion
COCONUT THAI SALMON
Marinade ingredients for 2 pieces of salmon:
-1/4 cup coconut milk
-juice of ½ lime
-1 tsp soy sauce
-1/2 tsp fish sauce
-bit of fresh garlic, chopped fine
-bit of fresh ginger, chopped fine
-1-1 ½ tsp lemongrass paste
Marinate salmon for as long as you like, 20 minutes to overnight.
Ingredients for cooking salmon:
-1/2 cup coconut milk
-2 tsp soy sauce
-juice of 1 lime
-1 tsp fish sauce
-2 cloves chopped garlic
-1 tsp fresh ginger
-lemongrass (in tube or fresh)
-small onion, chopped
-fresh basil (optional)
-fresh cilantro
-baby bok choy
To make the salmon:
-Pat fish dry. In hot pan with 1 tsp coconut oil (or other), sear skin side down for 4 minutes. Turn and cook on other side for 3 minutes. Remove fish and set aside.
-In a measuring cup, mix coconut milk, soy sauce, lime juice, and fish sauce to create coconut milk mixture. Set aside.
-Saute garlic, onion, ginger, and lemongrass for a few minutes until soft and fragrant in a little oil.
-Add coconut milk mixture. Allow to bubble and thicken slightly.
-Add fresh basil and cilantro.
-Once to desired consistency, add baby bok choy and saute for a couple of minutes. Place in bottom of bowl and nestle salmon on top.
-Serve with rice if desired
