Last week we made Pork Dumplings, and this week we're using fresh pork shoulder to make a unique fusion dish: Char Siu Stuffed Cornbread Muffins! We combined our love for Chinese food and Southern to make this different dish!
Cha Siu Recipe
~2 lbs Bone-In Pork Shoulder
Marinade:
2 bean curd cubes
1 tbsp bean curd cube liquid
1 1/2 tbsp soy sauce
1 tbsp oyster sauce
1/2 tbsp hoisin sauce
splash of sesame oil
2 tbsp honey
Glaze:
2 tbsp maltose
1/4 of marinade mix
Directions:
1. Whisk marinade ingredients together in a bowl
2. Set aside 1/4 of marinade for glaze
3. Put shoulder and 3/4 of marinade in vacuum bag and marinade overnight in fridge
4. Cook in sous vide for 10 hours at 140 degrees F
5. Remove from sous vide and vacuum bag and let rest
6. While shoulder is resting, mix the maltose and 1/4 of marinade mix that was saved to make the glaze (place maltose jar in warm water to become workable)
7. Cover pork shoulder with glaze mix
8. Place pork shoulder in oven for 30 minutes at 225 degrees F
9. Remove from oven and finish off with torch to get a char on the outside
Char Siu Stuffed Cornbread Muffin Recipe
Cornbread Mixture:
1 1/3 cup flour
1 cup cornmeal
1/3 cup sugar
1 tsp salt
1 tbsp baking powder
1/2 cup butter (1 stick), melted
2 eggs
3/4 cup milk
Char Siu Filling:
1/3 cup diced char siu
1/2 tsp sugar
1 tsp oyster sauce
1 tsp soy sauce
1/4 sesame oil
1/2 tablespoon cornstarch
3 tablespoons water
Directions
1. Preheat the oven to 350 degrees F
2. Mix water and cornstarch until homogeneous
3. In a sauté pan on low heat, mix all Char Siu ingredients until mixture has thickened
4. In a large bowl, whisk to combine all dry ingredients (flour, cornmeal, baking powder, and salt.
5. In another bowl, whisk to combine the wet ingredients (butter, eggs, milk)
6. Whisk while pouring the wet ingredients into the dry ingredients. Continue to whisk until combined and you have a smoother consistency
7. Fill cupcake molds 1/3 of the way full
8. Scoop in char siu filling into each mold
9. Cover the filling with the remaining cornbread mixture
10. Place in the oven for 25 minutes.
11. Enjoy!
