Nothing says “Chinese New Year” more than Pineapple Tarts. It is eaten and gifted unlike any other cookie over this festive period. Pineapples are an important symbol for the Chinese of Hokkien descent as the Hokkien word for pineapple “Ong Lai” translates to “Prosperity is here”. That is why we see pineapples hanging everywhere during Chinese New Year. So make sure you have jars of pineapple tarts in your home to welcome prosperity in the coming year!
Pineapple tarts in the Soosay household is usually a Christmas tradition. Anne makes them every year, branded with our signature “S” for Soosay. We love these open-faced tarts as there isn’t too much pastry and it simply melts in your mouth. We are fortunate that our parents are here in Singapore this CNY so we get to eat our mum’s homemade pineapple tarts 👏🏼👏🏼👏🏼

PINEAPPLE TARTS
Ingredients:
Makes about 120 pieces
Pineapple Jam:
3 Pineapples
250g Sugar
180g Rock Sugar
8 Cloves
1/2 tsp Salt
Dough:
375g Butter
600g Plain Flour
140g Icing Sugar
1 1/2 Egg Yolks
1 tsp Vanilla Essence
Egg wash:
2 Eggs (beaten & strained)
