RECIPE
INGREDIENTS
2 capsicums, roasted
2 small onions roasted
4 medium tomatoes, cut into large pieces
2 bay leaves
1 clove garlic
2 small onions
½ cup milk
1 tbs. cornflour
2 tbs coriander, chopped
¼ tsp. black pepper
Method
Roast capsicums and onions. Cool, wash and remove the stems and seeds. Set aside. Pressure cook tomatoes along with bay leaves and garlic with 3 cups of water. Strain the tomato puree and grind the pulp along with capsicum and onions. Add the strained water and salt to the pulp and set to boil. Mix cornflour in half a cup of milk and add to the tomato - capsicum broth, stirring constantly. Add black pepper powder and cook till it comes to a boil. Transfer to a serving dish and garnish with coriander leaves. Fresh cream may added, if desired. Serve hot.
