Japanese Chashu 日式叉烧肉
Ingredients
2lb Pork Belly Butt Roast 去皮五花肉2磅
1 Big piece of ginger sliced 一大块生姜切片
1 large shallot sliced (or Green Onion) 红葱头一个切片(或用青葱替代)
2/3 cup cooking sake (rice wine) 3分之2杯 米酒或者日式清酒
2/3 cup soy sauce 3分之2杯酱油
2/3 cup Mirin 3分之2杯味淋
5 tbsp sugar 5大勺白糖
1cup water 一杯清水
1-2tsp salt (optional) 1-2小勺盐(根据自家口味调整)
How to cook
1. Brown meat 先把肉两面煎黄
2. add shallot and ginger 加入红葱头和生姜炒香
3.add all the ingredients, cover cook with low heat for 2hours( 120 minutes) 加入所有食材,盖上锅盖小火煮两小时
4. soak the meat in the sauce for over night 煮好的肉泡过夜
5.remove all fat from the meat sauce 撇去浮油
