The principle is to take a classic salty soy sauce and transform it in a few minutes to make it an explosion of flavors.😋

INGREDIENTS
FOR 25 cl OF GANJANG MAT SOY SAUCE CONFIT:
170ml soy sauce
130ml water
65 ml of white alcohol
(soju or gin)
15 ml fermented anchovy sauce or 1 sheet of dasima seaweed
¼ turnip
2 leaves of green leek
4 garlic cloves
¼ onion
1/3 lemon
1/3 apple
10 large black peppercorns
🍖For Korean tteokgalbi steaks:
500g ground beef
1 egg
½ onion
½ carrot
2 tbsp. starch or maizena
9 c. mat ganjang
4 tbsp. tablespoons saengang cheong (recipe here: • Saenggang-cheong : rec... )
5 cl of water
