One of the best calzone you can eat in Italy is the meat calzone. The recipe that we show you is the one that grandmother used to make 60 years ago, as an alternative to meat panzerotti. The filling is in fact the same, it changes that is enclosed in two discs of leavened dough.
INGREDIENTS - MEAT CALZONE - 32 CM
For the stuffing:
600 gr of minced meat, mixed veal and pork
2 eggs
A level teaspoon of salt
250 gr of well-drained scamorza or mozzarella
6-7 tablespoons of grated pecorino romano
2 tablespoons of extra virgin olive oil
pepper
DOUGH:
450 grams of flour 0 or 00
3 gr of brewer's yeast
Half a teaspoon of sugar
20 ml of milk
200 ml of water
A teaspoon of salt
A tablespoon of oil in the dough
+ 2 to grease the calzone above and below
