Panch Phoron Chili Stir Fry is a quick recipe to perk up chili flavors by stir frying them with whole Panch Phoron ingredients.
In Bengali the parsing of Panch Phoran is as follows: Panch - Five; Phoran- tempering. Literally means a tempering with five spices.
Contrary to other spice blends, this spice mixture is used in its whole form. It is used for various vegetable stir fries and in gravies as well to give pickle-like flavors. It can be used whole or coarsely crushed, but never powdered. In Bengali cuisine, it's an essential spice blend for meat, dal and veggies.
