Shaam Savera Kofta Curry | शाम सवेरा कोफ़्ता करी | Palak Paneer Kofta Curry | Ami’s Cooking
The looks of this Shaam Savera Kofta Curry takes after the contrast of darkness of night and brightness of day by presenting the cut koftas on the bed of curry. I must mention that the best spinach dish you would ever taste is this Shaam Savera Kofta Curry or also called Palak Paneer Kofta Curry.
Here, I have used simple ingredients to create this restaurant quality dish. Although, this dish requires few steps which may sound time consuming, but really not that hard to follow this recipe.

Shaam Savera Kofta Curry Recipe :
Blanching Spinach :
Take 250 Grams of spinach and boil 5 minutes.
Add into ice cold water for 5 minutes.
Puree after squeezing excess water.
1 Cup Spinach puree is ready.
Kofta Outer Layer Making :
Ingredients :
2 to 3 TBSP Oil
1/4 Tsp Caraway Seeds
1/2 Cup Chickpeas Flour(Besan)
1/2 Tsp Ginger
1 Tsp Green Chili Paster
1 Cup Spinach Puree
1 Tsp Salt
1/4 Tsp Cardamom Powder
1/2 Tsp Coriander Powder
1/4 Tsp Garam Masala
1/2 Tsp White Pepper Powder
Heat a pan on medium heat and add oil.
Add caraway seeds and let it splatter.
Add besan and roast until golden.
Add ginger and green chili paste.
Add spinach puree and add salt and remaining spices.
Mix well and cook until dough forms.
Kofta Stuffing Making :
Ingredients :
500 Grams Paneer
1 Tsp Salt
1 Tsp White Pepper Powder
1/2 Tsp Cardamom Powder
1/2 Tsp Ginger Powder
2 Tbsp Corn Flour
Corn Starch for coating.
Combine all and knead until smooth dough forms.
Kofta Making :
Make 1 tbsp balls of stuffing and stuff into spinach dough carefully.
Coat in corn starch.
Fry in sizzling hot oil until lightly golden.
Gravy Making :
Preparing Gravy :
Ingredients :
4 Tbsp Oil
1/2 Tsp Cumin Seeds
3 Big Onions Sliced or Roughly Chopped
1 Tsp Salt
2 Seeded Jalepeno
3 Big Cloves Garlic
1 Tsp Grated Ginger
1/2 Cup Cashews
3 Large Tomatoes Roughly Cut
Add oil and cumin in a large pan.
Add onions, jalepeno, garlic,, ginger, salt and cashews.
Saute until golden.
Add tomatoes, cover and cook 8 minutes.
Cool and grind fine with little water if necessary.
Pass through sieve to make gravy smooth.
Cooking Gravy :
Ingredients :
1 Tbsp Oil
2 Tbsp Butter
4 Pieces Cinnamon
1 Star Anise
1/2 Tsp Pepper Corn
1/2 Tsp Cardamom Seeds
1/2 Tsp Cumin
1/4 Tsp Turmeric
Red Chili Powder To Taste
1 Tsp Coriander Powder
Salt To Taste
1 Tbsp Honey
1/2 Tsp Dry Fenugreek
1/4 Tsp Garam Masala
1/2 Cup Fresh Cream
Add oil and butter in a large pan.
Add cinnamon, star anise, pepper corn, cardamom and cumin seeds.
Let it splatter and add turmeric and chili powder.
Add prepared gravy.
Add coriander powder and salt.
Stir well and adjust salt to taste.
Cover and cook 7 minutes.
Add honey, fenugreek, garam masala and fresh cream.
Bring to boil and cook further until desire consistency.
Serving Shaam Savera Kofta Curry :
First spread gravy and put half cut koftas for the Shaam Savera looks.
Sprinkle dry fenugreek, cashews, cream and spicy oil(rogan)
Bonus Spicy Chili Oil (Rogan) Making Recipe :
Heat 1 cup any flavorless oil until warm.
Turn off stove and add 1/3 cup Kashmiri red chili powder.
Combine well and chili oil is ready.
