Spicy Green Mung Beans Curry Recipe :
Ingredients :
1/2 Cup Green Mung Beans
2 Tsp Oil/Ghee
1/4 Tsp Cumin
3 Curry Leaves
1 Dry Red Chili
1/4 Tsp Asafoetida
1 Tbsp Chopped Garlic
1 Tbsp Chopped Green Chili
1/4 Tsp Turmeric
Red Chili Powder To Taste
1 Tsp Ginger Paste
1 Cup Chopped Tomato
Salt To Taste
1 3/4 Cups Water
1 Tsp Lemon Juice
1/4 Cup Chopped Coriander
Method Of Making Spicy Green Mung Beans Curry :
1. Wash mung beans 3 times and soak for 4 hours in plenty of water.
2. Wash mung beans again and drain water.
3. On a medium heat, heat a pan.
4. Add oil, cumin and let it splatter.
5. Add asafoetida, garlic and saute 1 minute.
6. Add green chili and saute 1 more minute. then add turmeric and chili powder. Mix well.
7. Add ginger, tomato and combine well. Add salt and 1/4 cup water.
8. Bring to boil and add mung beans. Add remaining water.
9. Bring to full booil, cover and lower the heat.
10. Mung beans is cooked after 15 minutes. Turn off stove and add lemon juice.
11. Sprinkle chopped coriander and serve with rice or roti.
