Ingredients:
1. Raw Mango - 2 Medium Sized
2. Mustard Oil - 1.5 tbsp
3. Asafoetida/Hing - 1/4 tsp
4. Mustard seeds - less than 1/4 tsp
5. Cumin/Jeera - less than 1/4 tsp
6. Fenugreek/Methi seeds - less than 1/4 tsp
7. Fennel seeds - less than 1/4 tsp
8. Carom seeds/Ajwain - less than 1/4 tsp
9. Turmeric powder - 1/4 tsp
10. Red chilli powder -3/4 tsp
11. Salt 1/2 tsp
11. Jaggery 200 gms
Method:
1. Wash, peel and slice the mangoes.
2. Heat Mustard oil.
3. Add Asafoetida/Hing.
4. Add Mustard seeds.
5. Add Cumin/Jeera.
6. Keep on low flame to avoid burning.
7. Add Fenugreek/Methi seeds.
8. Add Carom seeds/Ajwain.
9. Add Turmeric powder.
10. Add Red chilli powder.
11. Add Salt.
12. Add Jaggery. Mix well and let it melt.
13. Add Fennel seeds and mix well.
14. Once the Jaggery melts completely, add sliced raw mangoes.
15. Boil for 10-12 minutes on medium flame.
16. Check the consistency as shown and switch off the stove.
17. Sweet & Tangy Instant mango pickle ready to eat!!!
Note: This can be stored for good 1 week.
