Here's the veganized recipe of Kevin de Bruyne's favorite meal, enjoy!
“Ricotta”:
-250g cashews
-150ml plant milk
-150g vegan yogurt
-2 Tbsp lemon juice
-2 Tbsp nutritional yeast
-salt and pepper to taste
Spinach:
-1 Tbsp oil for frying
-1 onion
-2 cloves of garlic
-400g frozen spinach
-a handful fresh basil
-salt and pepper to taste
Else:
-250g cannelloni
-600g tomato sauce
-salt and pepper to taste
-1 Tsp dried basil
-1 Tsp dried oregano
Instructions:
First soak the cashews in boiling water for 30 minutes. Then drain and blend in a food processor with plant milk, vegan yogurt, lemon juice nutritional yeast and season to taste.
2. Heat up some oil in a pan and fry chopped onion and garlic for a few minutes before adding the spinach to let it defrost.
3. Now stir in a handful of fresh basil and season to taste. Add about 2/3 of the vegan ricotta to the spinach and fill your cannelloni with this mixture.
4. Combine the tomato sauce with the spices and pour half of it in a baking dish. Then place in there the cannelloni, pour over the remaining tomato sauce and a few dollops of the vegan ricotta.
5. Bake in the air fryer or oven at 180C/360F for 30-40mins
