材料:
龍蝦尾 2隻
奶油 2大匙
紅蔥頭 5瓣(切片)
蘑菇丁 1/2 杯
白葡萄酒 1/4杯(或雪梨酒 sweet vermouth)
奶油 2大匙(30公克)
中筋麵粉 1 1/2大匙
魚高湯(或高湯)約 3/4 杯 (180c.c.)
鮮奶油 1/4 杯(60c.c.)
E.V. 橄欖油 適量
鹽 少許
黑胡椒 少許
帕馬森芝士絲 2大匙 (11公克)
沙拉蔬菜 適量
E.V. 橄欖油 少許
檸檬 2 塊
巴士里碎或蔥碎 少許
做法:
把龍蝦尾中間用剪刀把殼剪開,在鍋中加入橄欖油,中小火煎4分鐘,再兩邊各煎1分鐘。
然後取出放涼。
在鍋中加入橄欖油,加入紅蔥頭炒香,再加入蘑菇拌炒,加入少許鹽、胡椒,
然後加入酒煮約2 分鐘,倒起備用。
把龍蝦尾剪開,取肉切大塊備用。
預熱烤箱至 180C.
在另一鍋中加入奶油和麵粉中小火拌炒至麵粉溶掉,然後加入高湯拌煮至濃稠,
加入炒蘑菇料和鮮奶油拌煮,
用鹽、胡椒調味,然後加入龍蝦肉、芝士拌勻即關火,
把炒料填入龍蝦殼,再鋪上芝士絲,淋上E.V. 橄欖油,放入烤箱烤至金黃,約 5分鐘。
把烤龍蝦放在盤子上,撒上巴西利碎,放上檸檬,配沙拉一起食用。
**沒用到的龍蝦頭,可加水、薑片、米酒煮湯,用鹽、胡椒粉調味。
法式芝士焗龍蝦 Lobster Thermidor (Homard Thermidor)
Ingredients:
2 lobsters
2 tbsp butter
5 shallots (chopped)
1/2 cup diced mushrooms
1/4 cup white wine
2 tbsp butter
11/2 tbsp flour
3/4 cup broth
1/4 cup heavy cream
E.V. olive oil for cooking
Salt and pepper to taste
4 tbsp shredded Parmesan cheese
2 tbsp chopped parsley
Method:
Cut lobster tail up the center to expose the meat with kitchen scissors. Add olive oil and butter in a pan over medium heat. Sear the meat for 4 minutes and then sear the both sides for 1-2 minutes.
Remove the lobsters tail on a plate and set aside.
Add the olive oil in the same pan, add the shallot until fragrant and then add the mushrooms, salt and pepper to taste.
Pour the wine in the pan and cook until the wine to half liquor. Pour in a bowl and set aside.
Remove the lobster meat and cut into large pieces.
Preheat the oven to 180C.
Add olive oil and butter in a pan over medium heat. Add the flour and cook until the flour melted, add the broth and cook until thicken.
Add the mushrooms mixture and cream into the pan, stir and cook for a few minutes.
Salt and pepper to taste, stir in lobster and some cheese, mix well.
Spoon the mixture into the lobster shell, sprinkle some cheese on the top, bake in the oven until golden brown around 5 minutes.
Place the lobster on the plate, sprinkle some chopped parsley and lemon.
