ingredients
Countertop:

Strawberry Jam:
🍓 200 g strawberry puree
🌽 1 teaspoon corn starch
🍬 3 spoons of sugar
Cheese cream:
🧈 150 g butter
🍬 100 g powdered sugar
🌸 vanilla
🧀 400 g cream cheese
Syrup for hydrating the top:
🍇 4 tablespoons of raspberry syrup
💧 4 tablespoons of water
Instructions:
Preparation of the top:
🌡️ Preheat the oven to 180°C.
🥚 Beat 2 eggs, vanilla, a pinch of salt and 60 g of sugar until they become a white foam.
🌸 Add 60 g of flour, mixing gently until homogenized.
🧈 If you use a tray, grease it and line it with baking paper. If you use a baking ring, don't grease it, just line it with aluminum foil.
⏲️ Bake the top for 20 minutes or until it passes the toothpick test.
❄️ Let the top cool completely, then cut it into two or three equal layers.
Preparation of strawberry jam:
🍓 Mix 200 g of strawberry puree with 3 tablespoons of sugar and 1 teaspoon of cornstarch in a saucepan.
🔥 Cook over medium heat, stirring constantly, until the mixture thickens.
❄️ Let the jam cool completely before using.
Preparation of cream cheese:
🧈 Beat 150 g of butter, 400 g of cream cheese with 100 g of powdered sugar and vanilla until it becomes a fluffy cream.
🧀 Mix until homogeneous.
Hydration of the top:
💧 Mix 4 tablespoons of raspberry syrup with 4 tablespoons of water.
🍰 Use this mixture to syrup each layer of the top.
Assembling the cake:
🎂 Put the first layer of the top on a plate and syrup it.
🍥 Grease the top with a thin layer of cream.
🍥 On the edges, form a ring with cream, so as to create a space in the middle.
🍓 Fill this space with strawberry jam.
🎂 Continue with the second layer of the top, syrup it and repeat the previous steps.
🎂 If you have three layers of countertop, repeat the steps.
🧁 Cover the cake with the remaining cream, leveling it with a spatula.
Coloring and decorating:
🌈 Color some cream with red dye.
🍰 Decorate the cake according to your preferences, using colored cream, fresh fruit, grated chocolate or anything else you want.
Cooling:
❄️ Put the cake in the fridge for at least 2 hours before serving to stabilize the cream.
