If you've been down to Hammond, Louisiana for the BBQ contest, you are sure to have run into one of the many Po Boy Shops in the area. We have eaten our fair share of them over the years and wanted to share our version of the fried shrimp po boy, one of Louisiana's best treats, with you!
Fried Shrimp Po Boy
Ingredients:
Country French Bread Loaf
Dukes Mayo
Sliced Tomatoes
Shredded Lettuce
Hamburger Pickle Chips
Boars Night Out White Lightening with Double Garlic Butter
Peeled and deveined shrimp
LeBlanc's Seasoned Fish Fry Mix
Process:
1. Rinse shrimp well, be sure to shake off the water
2. Dredge shrimp in LeBlanc's Seasoned Fish Fry
3. Heat Oil in Fryer up to 375 degrees
4. Fry Shrimp for 3 or 4 minutes (should be golden brown and firm)
5. Split Country French Bread loaf in half (like a sandwich)
6. Spread Duke's Mayo over bread and toast until golden brown on a flat top
7. Remove bread from flat top and spread a thin layer of Duke's mayo over both sides
8. Cover bottom half of bread with a generous amount of shrimp
9. Cover shrimp with shredded lettuce
10. Cover lettuce with hamburger pickle chips
11. Cover pickle chips with thin sliced tomatoes
12. Sprinkle Boars Night Out White Lightening w. Double Garlic Butter over tomatoes
13. Wrap in butcher paper and enjoy!
