INGREDIENTS for 4 piadinas with cooked ham, singles and egg:
00 flour 150 grams
Milk 200 millilitres
Water 100 millilitres
Eggs 30 grams
Salt 5 grams
Sugar 10 grams
Extra virgin olive oil 1 teaspoon
Fresh dill 1 tuft
Seed oil as needed
For the stuffing:
Eggs 4
Cooked ham 150 grams
Thin slices 200 grams
Chilli flakes to taste
In a bowl, mix the milk with the egg, water and oil; add the salt and sugar, mix and add the sifted flour.
Chop a bunch of dill and mix with the mixture
Brush a non-stick pan with a diameter of 20 cm with a little oil, let it take heat and add a ladle of the mixture. Distribute it on the surface and let it cook over moderate heat for a few minutes, then turn the piadina, let it cook for a few more minutes and turn again.
Put 1 egg in the center and break it in order to sprinkle the whole surface, add a few flakes of chilli.
Lower the heat and let it coagulate, you can cover with a lid to speed up this step.
Turn again to cook the egg well then turn the piadina again and add the cooked ham and the slices.
Close in a crescent and leave on the heat for a few moments, always low heat.
