INGREDIENTS
Puff pastry 320 grams
Green apples 300 grams
Lemons 1
Apricot jam 140 grams
Water 60 grams
Sugar to taste
Egg Yolks 1
Cut the apples in half without the part of the core then cut them into thin slices, place them in a bowl filled with cold water the lemon juice.
Place the jam in a saucepan, pour in the water in and bring to the boil over low heat.
Stir continuously and let it simmer for about 1 minute, then remove from the heat.
Cut the puff pastry into 8 rectangles of similar size, transfer them to a baking sheet lined with parchment paper slightly spaced apart.
Arrange a few slices of apple on each rectangle, overlapping them slightly, spread half of the jam over the apples, brush the edges of each sheet with a yolk diluted in a spoonful of water and sprinkle with a little sugar.
Bake in a preheated static oven at 190 °C ( 375 °F ) for about 16-18 minutes. Once baked. take them out of the oven and brush them with the remaining jam, let them cool and serve.
